asian zucchini fries with thai peanut sauce

hi! today we had some leftover zucchini which my mom wasn't going to use, so i decided i would whip up a twist on the ever-so-popular zucchini fries! since i love asian food, i thought i would take my own twist on it and make a peanut sauce as well! 

ingredients

for the fries 
- 1 medium - large zucchini 
- 1/4 cup of flour or a flour substitute 
- 1/2 tsp of salt
- 1/4 tsp garlic powder 
- 1.2 tsp soy sauce 
- 1/2 almond milk (you can also use any other type of milk)
- 1 cup of panko (asian breadcrumbs) * any other breadcrumbs work as well

for the sauce 
- 4 tbs of peanut butter 
- 4 tbs water 
- 3 tbs rice vinegar  
- 2 tbs of soy sauce 
- 3 tsp stevia (or sugar if you would like)
- 1 tsp ground ginger


directions - fries 
- cut your zucchini into sticks 
- preheat the oven to 400 F
- set aside 3 bowls, one for the milk and soy, one for the flour, salt, and garlic powder, and one for the panko
- grease a baking sheet to put the sticks on after being seasoned and put it aside
- dip each zucchini stick into the almond milk first, then the flour, then the panko, and place it on your greased baking sheet
- bake your sticks for 20 minutes, or until they are as crispy as you want!


directions - peanut sauce 
- blend your peanut butter, water, stevia, soy sauce, ginger, and rice wine vinegar in a blender or a bowl
- refrigerate for 1-2 hours before serving 





okay these really tasted amazing and i had so much fun making them!
